Vegan Chocolate and Apple Brownie: By Jade London

 

This recipe, I adapted myself from Vegan Chocolate Brownie from a recipe book. It originally contained higher amounts of white sugar and oil, which I found unneccasary. It also used water instead of rice milk. It's certainly not would I would call healthy though, but it's delicious. It's also very crumbly so probably best eaten with a spoon.

 

Ingredients.

 

2 cups wholewheat flour

1 cup brown sugar

2 tbsp maple syrup

1 tsp baking powder

1 tsp salt

1/2 cup oil (vegetable oil or other that is stable at high temeratures)

1 1/2 cups Rice milk (or other vegan milk alternitive)

1 tsp vanilla flavour

1 cup of apple (chopped into small pieces)

 

Mix together the dry ingredients, Flour, sugar, baking powder and salt. Then add the Oil, milk and vanilla, and mix well. Finally, mix in the cooked apples.

 

Spread the mixture out on a flat baking tray, about an inch and a half thick. Place in the centre of a pre-heated oven, 175C/350F and cook for approximatley 25 minutes.

 

 

You could also use raw cane sugar if you prefer, or agave nectar in place of the maple syrup and/or sugar. The recipe is very adaptive to other ingredients. Just make sure you add the dry ingredients first, and wet ones after.
